Some may say John Lewis is a queso connoisseur. The celebrated pitmaster grew up just north of the border in El Paso, Texas, where he developed a fierce appetite for Mexican border food at a young age. Some of his favorite childhood memories include visiting the vibrant Hatch chile farms nearby in New Mexico and digging into heaping platefuls of chile rellenos.
